Knife Skills Life Skills

Learn how to own your knife, minus the plasters.  Dice, slice, and chop your way to Cook-dom Come!  In this class we will work with Global Knives and learn how to maintain, sharpen and use a chef's knife properly for daily use and improved everyday cooking.  We will also cover key concepts such as butchering a whole chicken and filleting a whole fish.  Ultimately you will gain a better understanding of how to cook, kitchen dynamics, and which utensils and items create a  functionally sound kitchen.

Croissants Experience

Bonjour!  Learn the art of baking fresh, flakey, buttery French croissants from scratch!  Join me in my kitchen as we prepare a base of laminated dough enriched and kneaded with fresh yeast, and of course, butter.  

We will pick up the important techniques and tips of the art of making and shaping croissants, almond croissants, pain au raisin, and pain au chocolat.  All ingredients and recipes provided.

Macarons make picture perfect gifts for special occasions, or simply for treating yourself in the best possible way.  Dive into colourful elegance and launch into macaron outerspace as you learn to create these wonderful teatime treasures at home. We will be making three types of flavoured macarons and three unctuous complementary fillings to match.

Chocolate Dessert Decadence

Chocolate: our go-to, nice-save, easy-release.  Chocolate is an ingredient worth discovering through and through.  We will be baking a delectable chocolate ganache tart encased in a light sweet pastry, and a salted-pecan brittle to top it off.  We will also be making a milk chocolate pot-a-creme with passionfruit sauce (baked custard), and finally, melt-in-your-mouth chocolate fondants with raspberry coulis and creme chantilly.

Thai & Vietnamese Feast 

Based on my travels and recipes collected throughout Southeast Asia, in this lesson we will prepare the following tantalising dishes:  Thai green papaya salad, hot and sour soup, Vietnamese summer rolls. beef Massaman curry, Vietnamese caramel pork in a clay pot (known as thịt kho tộ), and plenty of perfectly cooked rice to go around.

Italian Affair

Ciao bello!  There's a lot more to Italian cuisine than getting the pasta "al dente".  We will cover key concepts in creating a classic three course Italian masterpiece, of which will include two pasta dishes ("primi piatti"), one main ("secundi piatti") with vegetables (or "contorni") and one dessert ("dolce").  It's also the perfect piece for your dinner party or Sunday lunch.

French Artful Tarts

In this class we will cover the tips and techniques to preparing three classic full-sized (23cm) tarts: Mouthwatering lemon meringue ("tarte au citron"), classic fruit tart ("tarte aux fruits"), and a chocolate caramel ganache pecan tart.  We will cover Classic French technical concepts: Italian meringue, creme patissiere, and ganache produced hands-on, and at home!

Spanish Traditions

Want to create the perfect paella?  This class is for you!  But Spanish cuisine is not just about paella.  It's about exquisitely flavoursome regional dishes which have stood the test of time.  In this lesson we will create dishes from Valencia and Catalonia, such as suquet de peix (fisherman's stew), a perfect and proper Spanish tortilla, gazpacho, crema catalana (a decadent custard) for dessert, and of course, paella.

This class is all about eggs and getting them done right!  We will cover the in's and out's of poaching, boiling, scrambling and baking with precision cooking techniques, and delegg-table recipes.  We will also prepare a light and zesty hollandaise to go with our Eggs Florentine, a spicy Shakshuka (Middle Eastern egg dish), and a curried Kedgeree to complete our eggcellent array of brunch-type dishes.
